Pasta Lentil Salad
I decided to cook something last night, so only got a blouse cut, not sewn. But I have tasty pasta salad, now. ![[livejournal.com profile]](https://www.dreamwidth.org/img/external/lj-userinfo.gif)

Pasta Lentil Salad
3 c dry pasta (I used penne)
1 c dry lentils
1 pkg button mushrooms
1 pkg grape tomatoes
1 small zucchini
6 scallions
2 carrots
1/4 c olive oil (or less, to taste)
balsamic vinegar to taste
salt & pepper to taste (I used Shallot Salt & Shallot Pepper from Penzey's)
Cook pasta and lentils (separately!) according to package directions. Drain and rinse in cool water. Chop vegetables. I varied the sizes and shapes for some visual interest. Pour in oil, vinegar, and seasonings. I shredded just a touch of aged white cheddar over the top, too.
Makes a ton.
