Tex-Mex Creamy Top Casserole

OK the name sucks ass, I know. I can't think of something else. This is what I made up for dinner last night. It tasted better than the name sounds.

Tex-Mex Creamy Top Casserole
1-2 lb. ground beef (I used venison)
1 can diced tomatoes
dried minced onion, garlic powder, chili powder, cumin, and seasoned salt, all to taste (I used about 2 T of the onion, 2 t of the seasoned salt, and a tablespoon of everything else)
1 bag frozen vegetables (I used the Kroger brand "Mexican Style" one)
1 red pepper, diced
1 green pepper, diced
2 c of shredded cheese (I used sharp cheddar)
1 cup of yo-cheese
1/2 jar Pace Tequila-Lime Salsa

Brown the meat. Add seasoning and let simmer for about five to ten minutes while you chop the peppers. Add all vegetables (including tomatoes) and stir until heated through. Pour out into a large casserole and cover the top with shredded cheese.

In a separate bowl, combine the yo-cheese with the salsa. Gently spread the mixture over the top of the casserole.

Cook uncovered in a 350 degree oven for 20 minutes. Place under the broiler for about 10 minutes, or until creamy-cheese layer is slightly dry and cracking just a bit (like a cheesecake). Don't let it burn!

I make one very similar to this, but instead of dicing peppers, I layer the bottom of the casserole pan with roasted peppers.

And I add beans, but I suspect the bag of frozen veges probably has black beans, so you probably did as well.

Oh, and I've never used yo-cheese. I've never had yo-cheese, actually. I'll have to try adding that part next time.

It's plain yogurt put through a strainer (I use this one (http://www.amazon.com/gp/product/B000064841)) so it gets very thick--almost like cream cheese. It doesn't work well with flavored yogurts (so I've heard) but since I dislike pre-flavored yogurt, I've never had a problem with that. I just use plain, non-fat yogurt and it comes out really nice. I use it a lot.

It makes a nice fruit dip when mixed with honey and peanut butter. It's good to use half and half with mayo when you make tuna or chicken salad. Works great as a sub for sour cream as a chili topping.

I have a container of yo-cheese in my fridge at all times!
