Bread Pudding

I started with a recipe I found on the Food Network to remind me of anything I might forget to add, and then altered it significantly.

Bread Pudding
5 eggs, beaten
2 c milk
2 t vanilla
1 c brown sugar, packed
6 large pieces of thick, stale bread (about 8 cups of cubed bread pieces)*
1 c chopped pecans

Preheat oven to 350F. Grease 9x13 pan.

Beat eggs, milk, sugar, and vanilla. Cut bread into 1" cubes and pour into egg and milk mixture. Let sit for ten minutes. Gently fold in pecans. Pour into prepared pan. Bake for 25 mintues.

Sauce
1/2 cup butter
1 c white sugar
2 t vanilla
1 egg, beaten
1/4 c whiskey, bourbon, brandy, or, on [livejournal.com profile] kalimeg's suggestion, spiced rum

Melt butter in saucepan on low heat. Add sugar and vanilla. Combine well. Add egg gradually. Continue to stir over low heat until sugar melts completely. Add booze. Mix well and pour over baked pudding.

* I like a bread-heavy pudding. If you want a more eggy/milk pudding, just use less bread.

It's pretty fucking amazing. It's all I had for dinner. =D

Note I corrected an error--only 1/2 cup of butter in the sauce.

I wonder how sherry would be in tht sauce ... I tend to like the flavor if it a lot more. Or maybe spiced rum.

I have a bread pudding recipe adding Baileys with the milk. You might want to give that a shot sometime. :)

Love it... and love that you saw the Old Year out with all the stuff you're going to avoid for awhile.
I think I'd add craisins to it. I love a bite of tarty sweet.

Tell me, do you ever use powdered sugar for the icing? I was considering that putting cinnamon in the pudding might be good, and cider, spiced rum and powdered sugar might just be a really good icing. I never look at a recipe with the idea of following it, I guess.

I don't know if the powdered sugar would have the same consistency. The sauce is pretty runny, and that's how I like it. If you want a more icing texture topping, though, the 10X sugar might work.
