Spaghetti Squash Casserole
Spaghetti Squash Casserole
1 large spaghetti squash, seeded, cooked, and shredded
1/4 c melted fat (I like to use bacon grease, but coconut oil would work fine, too)
4 to 6 eggs
1/4 c coconut flour
1/4 c coconut milk
1 T blackened seasoning, or spice mix of choice. Don't skimp.
Any additional vegetables you'd like
Preheat oven to 375F.
Whisk eggs, milk, flour, and spices in a bowl. Set aside.
Thoroughly mix melted fat into squash strands. If you want to add additional vegetables (shredded carrots, turnip chunks, spinach), do so now.
Fold egg mixture into squash, making sure the pasty egg-mix is well incorporated.
Pour into greased casserole pan. Use a 9x13 or smaller, depending on the volume of vegetables. This casserole will not puff up much, so feel free to fill the pan pretty full. If you're feeling fancy, sprinkle the top with paprika for color.
Bake uncovered for 45 minutes.
This makes a great accompaniment to soups or saucy meat dishes. Just pour the food over the slice of casserole.
