Green Beans

I'm looking for some interesting vegetable side dishes. I've been bad about eating my vegetables lately. That needs to change. I'm not sure if this is the thing to inspire me, but I have to admit a sort of sick fascination. I might just have to try it. Do you think Diet Coke would work OK?

Grecian Green Beans with Coca-Cola
2 cn (16 oz ea) small whole Green beans, drained
2 shallots or small onions, peeled, thinly sliced, and separated into individual rings
2 cl Garlic, minced
1/4 c Fresh parsley, chopped
2 tb Sugar
2 ts Oregano leaves
2 ts Prepared mustard
1/2 ts Salt
1/2 c Coca-Cola
1/4 c Olive oil
2 tb Vinegar

In a large bowl, combine the garlic, parsley, sugar, oregano, mustard, salt, Coca-Cola, olive oil, and vinegar, stirring until the sugar is dissolved. Add the beans and shallots/onions; toss lightly with a fork. Pack into 1 quart jar. Cover and refrigerate several hours or overnight for the flavors to blend. Serve chilled or as a hot vegetable with steak, hamburger, or meat loaf. Makes 1 quart.

Yes. But you already have 2 Tb sugar so, why?

See my note to Roya. I just don't buy regular Coke 'cos I would never drink it. =) Honestly, though, I'd leave out those two tablespoons of sugar anyway.

I've had good luck with Coca-Cola pot roast in the past, so the green beans intrigue me!

It intrigues me as well...

here is one of my favorite salads:
broccoli
red onion
mushrooms
(all very finely chopped in whatever quantity you like)
golden raisins
crumbled bacon (or bacos)

mix together with a little Marzetti's original slaw dressing

There are no exact measurements but it's heavy on broccoli with all other ingredients just for flavor and intrest.

I know many artificial sweeteners don't stand up to heat, but I don't know if heating up some veggies would create enough heat to destroy the sweetness.

You can cook with Splenda so the Splenda Coke should be ok.

I once made a BBQ sauce that had Dr. Pepper in it and it was actually quite good. We tried it w/o the Dr. Pepper and it wasn't nearly the same.

I can't decide what I think the above would taste like -- with all that sweetener and yet all that vinegar and parsley and garlic.

The parsley is what gave me pause. Sweet parsley? Hmmm. And I would ditch the two extra tablespoons of sugar.

Coke, Mustard AND sugar? Yikes. That's a total of about 7 spoons of sugar there. I don't think Diet Coke would help.
But then, you know how I feel about Coca-Cola products anyway.

It's not the sugar content. It's just that Diet Coke is all I buy. I don't care for the taste of regular. =D
