Sweet and Tart Spinach Salad
Sweet and Tart Spinach Salad
Nothing terribly original here, just my variation on a theme. I am rather pleased with the dressing, though. Overall, makes for a very pretty presentation with the color combos.
2 c shredded spinach (I prefer "adult" spinach rather than baby spinach leaves)
2 T red onion, chopped fine
5-6 grape or cherry tomatoes, diced
3-4 large strawberries, halved and sliced
1/4 c sliced almonds
1/4 c Black Diamond Aged Cheddar, shredded (I don't insist on name brands very often, but really--it's the best)
3 T Indian Trail Cranberry-Orange relish
1 t honey
2 T balsamic vinegar
1 t oil
Combine the salad ingredients, but don't add the dressing yet. If mixed in the morning, the non-liquid ingredient flavors will blend nicely by lunch. Mix the dressing ingredients and store separately. Pour over just before serving.
