Sweet and Tart Spinach Salad
Nothing terribly original here, just my variation on a theme. I am rather pleased with the dressing, though. Overall, makes for a very pretty presentation with the color combos.

2 c shredded spinach (I prefer "adult" spinach rather than baby spinach leaves)
2 T red onion, chopped fine
5-6 grape or cherry tomatoes, diced
3-4 large strawberries, halved and sliced
1/4 c sliced almonds
1/4 c Black Diamond Aged Cheddar, shredded (I don't insist on name brands very often, but really--it's the best)

3 T Indian Trail Cranberry-Orange relish
1 t honey
2 T balsamic vinegar
1 t oil

Combine the salad ingredients, but don't add the dressing yet. If mixed in the morning, the non-liquid ingredient flavors will blend nicely by lunch. Mix the dressing ingredients and store separately. Pour over just before serving.

The cranberry orange relish would be an interesting addition to that exact same base dressing that I use a lot. I'll have to try it in a couple of weeks. Where do I get the relish?

I bought a TON of it at Checker's when they had it last winter (I think it's a seasonal purchase thing).
