Lentil Soup
I made up some lentil soup on a mission of mercy today. I've been told my lentil soup is...not bad...so here's the recipe. I think the soup at Aladdin Cafe is better, but mine's an acceptable substitute.
Olive oil
2 onions, chopped
4 garlic cloves, minced
2-3 carrots, sliced into coins
3 c dal variety (I used chana, urid, and toor this time)
1 t cumin
1 t Tony Chachere's
Juice of one lemon
~10 c water
Saute the onions until clear. Add garlic. Saute until golden. Add cumin and Tony Chachere's. Stir for a moment and add all remaining ingredients. Simmer for about an hour, until all lentils are very soft. If desired, use a hand blender to thicken up the broth. If you like a waterier soup, skip that step.
That's it! Soup is easy.

I also think I use a lot less cumin than most people. I have a friend who is allergic to it, and for whom I cooked very frequently for years. I don't think I even bought any until some time in the 1990s. I won't tell you my reactions to plain cumin -- they were -- odd.
