Venison Chili

This is a two-stage recipe.

Day 1
2 lb venison chops or round steaks
2 T Worchestershire sauce
1 t garlic powder
1 T soy sauce
1 t liquid smoke

Mix Worchestershire sauce, garlic powder, soy sauce, and liquid smoke. Layer venison in crock pot and sparingly pour seasonings over each layer. Cook on low heat for 6-8 hours until venison is well done and tender. Remove from pot and chill overnight.

Day 2
Prepared venison
2 cans diced tomato
1 can tomato sauce
2 onions, chopped
1 c water
1 T chili powder
1/2 t ground chipotle pepper
1 t cumin
1 t garlic salt
2 t sweet paprika
1/2 t turmeric
(spices may be adjusted to taste)

Chop venison into smaller than bite-size pieces. Combine all in crock pot and mix well. Cover and cook on low for 8 hours.

Hey, this reminds me--I have a bison steak that I need to use for something, and chili would be a nice use for that--especially cooking the meat slowly the day before in the slow cooker.

Thanks!

You're welcome! The two-stage cooking did wonders for the meat. I wish I'd thought of trying that a long time ago.
