Lemony

mckitterick is still feeling pretty crappy, so last night I made him lemon bars for dinner. Because I don't keep much white food in the house these days, I subbed Hodgson Mill Stoneground Whole Wheat White Flour and turbinado sugar for the usual white versions of each.

Oh my god they were Lemon Bars From Heaven. Yes, I had one. Fuck it. I don't dance until Sunday.

Betty Crocker Cooky Book Lemon Squares

1 c flour
1/2 c butter, cold, cut into pieces
1/4 c confectioner's sugar

2 eggs
2 T lemon juice
1/2 t baking soda
1/4 t salt
1 c sugar

Preheat oven to 350F.

Blend first three ingredients until well incorporated (I put them in my Kitchen Aid, turn it on low, and walk away for a few minutes). Press down evenly into an un-greased 9x9" (or 8x8") glass pan. Bake for 20 minutes. Remove from oven.

Combine remaining ingredients thoroughly and pour over crust. Bake 20 or 25 minutes. Do not overbake. Let cool at least 20 minutes before slicing.

My note: These don't puff up as high or remain as ...gelatinous... as many recipes. They're more like a lemony-icing flavored bar.

Oooo.... I do love me some lemon bars. This sounds like a very yummy recipe regardless of the substitutions (I especially like turbinado sugar).

It's a good recipe. That whole cookbook is excellent. It was recently republished, too, so you don't have to spend an arm and a leg for used copies on eBay anymore.
