Spinach Feta Casserole

Spinach Feta Casserole

6-8 thick slices of stale bread
8 eggs
1 c milk
1 package frozen chopped spinach, thawed and squeezed dry
1/3 c sun-dried tomatoes, diced
1/2 lb sausage, browned and drained (optional)
1 t Mural of Flavor
A whole hell of a lot of feta

Cover the bottom of a 9x13 pan with the bread slices. Sprinkle cooked sausage evenly over bread. Beat eggs in a large bowl. Add milk and seasoning. Blend. Add spinach and tomatoes. Pour over bread and sausage. Cover and let sit overnight in the refrigerator. Before baking, crumble feta over the top. Bake, covered, for 45 minutes. Remove cover and place under broiler for ten minutes. Let sit for five to ten minutes before serving.

If it's only the feta he dislikes, you could probably sub provolone. It would be a very different dish, but still tasty.

This is very similar to a breakfast casserole I've been making for years. Well Mom, now me. He likes that one. I want to try it with the spinach and feta YUM!

Someone in the house has a horrible reaction to onions. Poor guy's eyes water and swell like crazy. I've had some luck with using frozen chopped onions, but because of the higher moisture content from freezing, they don't brown or caramelize, so they don't (IMO) add as nice a flavor. And they still cause him a bit of discomfort.

When he's out of town, you better believe everything I make has tons of onions. =D

Once summer stuff start showing up on shelves, which should be soon since I saw a store unpack swimwear on Sunday, get him a cheap pair of those big uni-goggles. He could try them on in a store to make sure they fit over his glasses.

Goggles saved my relationship with onions.

It's worth a try. I don't have high hopes of them fitting over his glasses, though, since he's been looking for something similar for motorcycling.
