An early morning cooking success

I sort of made these vegetable pancakes this morning. I didn't have carrots. Or green onions. I forgot to add the baking powder, and I only used two eggs. I gave the milk a miss. But wow they turned out well. I need to allow more time for the zucchini to drain next time. The mixture was a little runny after letting it chill for twenty minutes.

They were a great light-but-filling breakfast. Perfect for my pre-dance workshop meal. There are four pancakes left over, and I think they'll reheat very nicely. Mmmm-MMMM!

Oh wow, those sound delicious. Rather like veggie pakoras, which I LOVE. I bet they'd be great with a little side of cucumber raita for dipping too. Fuck, now I want India Palace.

They were a bit like pakoras, only...not as good without the wrapper and deep fat frying. =D

I thought pakoras were batter-dipped fried veggies or paneer. Samosas are the things with the wrappers. (?)

In any case, pakoras can totally be primal (ie, use coconut flour instead of gram flour.)

The veg pancakes sound yummy!

Oh, you're right! Mmmm. Yes, I like those better, anyway. Might try them with coconut flour sometime...maybe someday I'll find a little Fry Baby (remember those?) at a garage sale.

oh gods, anything topped with sour cream wins in my book. I'm marking this for later attempts.

My 20% this weekend was a cheesy potato casserole, but the hash browns were all natural, so that counts right? hahah.

I did make it with Bacon Grease.

I made these too, and they really are that awesome! My change was using squash instead of carrots, but I think I may do both next time.

And I did one thing that made it non-primal because I really did want to see how these held up as pancakes, and not fritters. I could not find coconut flour, and I don't have the dry container for my Vitamix to try to make it from unsweetened coconut. I ended up using flour, spelt. If I can find coconut flour, this will be awesome if it still has the pancake fluffiness. It tasted fab! I hope I can find coconut flour for next time.

And my mixture was runny too, but putting it in to fry stopped it from spreading since the eggs firmed up pretty quickly.

(And I used Mural of Flavor, which is so incredible that I'm already almost out. I'm picking up more on Thursday. I may check Whole Foods for coconut flour, too.)
