1 pkg frozen broccoli and cauliflower mix
1 cup shredded chicken
1/2 c queso fresco (or other mild cheese), diced
6 eggs
Spices (for this one, I tried some curry powder)
Preheat oven to 350F. Treat a small casserole pan (this is an 8x12) with non-stick spray. Thaw and saute the vegetables. Add shredded chicken. Pour into casserole. Sprinkle cheese over vegetable mixture. Beat eggs and spices together. Pour over all. Cook, uncovered, for about thirty minutes, until eggs are firm.

I just had the frozen on hand. Fresh is always better.

We are big fans of these, too, although we call them the much fancier name of frittata (http://en.wikipedia.org/wiki/Frittata) instead of casserole, and you can put pretty much anything into them.
They are yummy and slices heat up well so they are a great thing to make on Sunday for breakfast all week.
