The fact that I feel a weird sort of validation about that is silly. But it's nice to be assured that a recipe I created really is straight-up Whole30-compliant with no modifications. And sounds tasty enough to be featured on the Whole30 webpage!
I don't think it's silly at all. Think of it this way:
Winning a ribbon at the County Fair and feeling proud isn't silly, so neither is having a recipe published on a site you admire.

Plus, I loved the tip included about a pasta server (huh! never thought of that), and making carnitas from the ribs.. super! You get more minerals than with a roast.

I hadn't considered the minerals aspect, but you're right. Especially when you make 'em in the slow-cooker. I've always used the country-style spare ribs for carnitas. It's a cheap cut of meat, tastier and fattier than roast, and I can use the leftover bones for stock. Grand Slam!
I've never made carnitas with ribs before. Hmmm. I should try. I've always used a pork butt, which also contains a good amount of fat. It is the perfect cut of pork for smoking as well.
I will post the soup I made with pork ribs later tonight. It may work for you, depending on the seasoning I use. The ingredient list is in Spanish. I'll have to translate to make sure there isn't added sugar.

And I am SO trying that recipe; cooking for one is a challenge for me and I tend not to "fuss" which means not eating as healthily as when I was cooking for two.

I ate steak last night at a restaurant. aisa0 is visiting, and we were out and about, and I decided we were going to "share" a NY strip. I ate about 1/4 of it. It was rare, and delicious. First bite of red meat I've eaten since I was 16 years old...you are the first person I thought to tell about it. :)
