Venison Berbere
Venison Berbere
2 lb ground venison
1 T bacon fat, separated
1/2 c red onion, marinated in a mix of coconut vinegar and balsamic vinegar (mine was leftover from my variation on this dinner, and had been marinading four or five days)
1 red bell pepper, chopped
2 c chicken stock
1 can diced tomatoes
1 large sweet potato, peeled and diced
1 to 2 t Berbere
In a soup pot, caramelize the red onion in half the bacon fat. Get them good and browned for a smoky-sweet flavor. Add the other half of the bacon fat and brown the venison. Add sweet potato and tomatoes. Cover and simmer. Meanwhile, puree the bell pepper and chicken stock. Add to pot. Stir to incorporate, and add berbere spice mix to taste. Simmer until you can smash the sweet potato so it thickens the soup. Mash up as much as you like, depending on how many lumps of potato vs. thickness of broth you prefer. There were very few potato chunks by the time I was happy with mine.
Serve with Mel's amazing cocoa cauliflower.

I'm thrilled. I had every spice in that Berbere mix!
I just sprinkled some of each into the red pepper puree.
