Baked Salmon Patties

I finally am happy with a no-bread-crumb salmon patty.

Baked Salmon Patties
1 can salmon
1/2 c pulverized pork rinds
1 T almond flour
2 medium eggs
1 T lemon juice
1 heaping t Penzey's Singapore Seasoning

Preheat oven to 375F.

Drain 1 to 2 tablespoons of the salmon liquid into your mixing bowl. Discard the remainder of the liquid. Turn salmon meat out into mixing bowl, combining skin and crushing the bones (these are good for you--don't throw them out!). Add remaining ingredients and mix well.

Spray a pan really well with olive oil, covering it super well. I mean, lay it on there thick.

Form eight patties with salmon mixture and space evenly over the pan.

Bake for twenty minutes. Carefully turn them with a nice wide spatula. Bake fifteen minutes more.

Oh and i tend to see the bones in the canned salmon and see beads that we sell out at ren fair. LOL

I use them to "bread" fish fillets before baking, too.
