Saucy Pork and Broccoli

I wanted to make something saucy that didn't use coconut milk. This came out well.

Saucy Pork and Broccoli
1 to 2 lb ground pork
Lots of broccoli, chopped into small (~1/2") florets (I used about 6 c, chopped)
1/3 c sliced almonds
1/2 c chicken broth
1/4 c coconut aminos
2 t ginger paste (or minced ginger)
2 t garlic paste (or minced garlic)
2 t Sriracha sauce
1/3 c almond butter

Brown the pork. Add ginger and garlic. Stir well. Add chicken broth and broccoli. Cook until broccoli is the slightest bit tender. Add remaining ingredients and stir well. Cook on medium, stirring regularly, until sauce is thickened and broccoli is at desired tenderness.

Garnish with roasted sesame seeds.

Note: I would have used green onions, sliced thin with about 1" of the green included, added at the same time as the broccoli. Alas, no green onions in the fridge last night. Next time.

Not really, no. I don't think the cauliflower would taste right at all. And anything else is going to have a different texture. Maybe carrot matchsticks? That's a big maybe, though.

Hmm.. yep, gonna have to look around on this one, I think.
I still suspect that I've got the Malabsorption issue, certain carby veggies are just miserable still for me. Maybe I can do okay with just the florets if I stay away the rest of the week.

I know! Bleh, right?

I'm coming to the conclusion that I'm really only happy with meat and greens in the summer, and some squashes in the winter.
I had hoped for homegrown young snap peas but the bunnies seem to like them and are eating them before they even grow!

Can you do eggplant? It would be a completely different dish, but I can see this working with Japanese eggplant.

No, I don't think zucchini would work at all with such a heavy sauce. Zucchini needs a light sauce or none at all, IMO.

I make zucchini noodles for "pasta" dishes, too. But in that case, I want the vegetable to disappear in the dish. Of course, if you're trying to hide the zucchini, it would work just fine for this dish! =D

Oh I've heard of people using zucchini noodles. I haven't tried that yet myself. Do you use that special julienne peeler to make the zucchini noodles?

I use a mandoline (which I love), but I'm thinking of asking for one of the peelers for xmas. It'd be nice to have really thin noodles once in a while.

This sounds tasty and spicy.

We had veggies and pork with 5-spice powder and coconut aminos (plus the pork itself was marinated with garlic)...very tasty.
