What the fuck did I just read?
Today's Tumblr collection is Tuesday, July 30: Maps.
As I pulled my lunch out of the fridge yesterday, I realized I had brought basically the exact same food for my breakfasts and lunches this week. I cooked and stockpiled two meals over the weekend and somehow didn't realize I was using largely the same ingredients in both. Amazingly, they taste different enough that I think I'll be okay.
Meal One
Pork and Green Bean Curry 1
1 lb ground pork
2 lb green beans, snapped into 1-1.5 inch lengths
2 c carrot puree
1 c broth
1 T coconut aminos
1 T Penzey's Bangkok Blend
1 c coconut milk
Shake up the green beans in a large bowl with melted coconut oil until well coated. Roast at 350F for an hour or more, until the beans are roasted to your liking. Stir at least every 30 minutes, shaking pan well each time.
Brown the pork. Add the beans. Turn heat to low and add remaining ingredients except coconut milk. Stir well to incorporate. Simmer for ten minutes or so to thicken. Remove from heat and stir in coconut milk.
Meal Two

2 lb green beans, snapped into 1-1.5 inch lengths
2 lb carrots, diced
1/2 c broth
1 T coconut aminos
1 T Penzey's Rogan Josh
1/4 c smooth almond butter
1 c coconut milk
Shake up the green beans in a large bowl with melted coconut oil until well coated. Roast at 350F for an hour or more, until the beans are roasted to your liking. Stir at least every 30 minutes, shaking pan well each time. When done, scoop into a container and set aside. Repeat roasting process for carrots.
Brown the pork. Add the beans and carrots. Turn heat to low and add remaining ingredients except coconut milk. Stir well to incorporate--stir extra well because sometimes that almond butter does not want to mix in. Remove from heat and stir in coconut milk.
Thanks to the texture differences between the two types of carrots, and the (IMO) varying flavors in the Bangkok Blend vs. Rogan Josh, the two dishes aren't terribly similar, taste-wise. I think I'm going to be ready for a break from green beans by the end of the week, though. Or maybe not. I dunno. Roasted green beans are fucking delicious.
I mentioned yesterday how my glutes were killing me after Sunday's session. Well, by 1pm my hamstrings, quads, and forearms had joined the party (WTF, forearms?). For most of the afternoon there wasn't a time that I was sitting that I wasn't using a lacrosse ball somewhere--under my butt, hamstrings, or pushing it into the top of my thigh. Just. So. Sore. Also, I needed/wanted a nap like whoa. Guess I did do a lot on Sunday. More than I thought.
Nobody will be surprised when I mention that I dislike Facebook. It's come in handy for a few things (finding a taker for those Josh Turner tickets), and it's the best way I can reliably communicate with Trainer Andrew. But overall, bleh. It's come to my attention that there's yet another thing I don't like about FB. It encourages people to think I want to be social. Mysteriously, someone I knew my freshman year of college found me on FB and friended me. Sure, okay. She lives in Connecticut, so no big deal. A few others from that circle found me and that was fine, too. But now one of them sent me a message that said "Hey, we should catch up sometime. When would you like to get together?" and I'm like "Um. Never?" I mean, this person is a fine person and all but I am full up on friends and the time I have available for friends. Especially In Person Friends. Hell, two of my bestest besties that are here in town I only see maybe every other month or so because of our schedules. I simply do not have the time or energy to devote to rekindling old friendships--and this person never even left Lawrence. If I wanted to stay in touch, I would have. Right? I mean...right? Does that seem weird to anyone else? If I wanted to catch up with someone, I'd have done so earlier or, you know, better yet, not fallen out of touch. The whole "hey let's get together someone" is so, so awkward.
God damn you, Facebook.

I use it for sharing pictures, consuming "positive content," and keeping a small channel open to people I like (even if I seldom get to see them). Getting tactical about it helped a lot to keep me from feeling overwhelmed.

I was STUNNED at how two large! bags of chard on sale at Natty Gros cooked down into one little pot for the freezer.

Different vegetables will, of course, cook down more.
As you've learned, greens cook down like whoa. The giant bag of baby kales from Costco cook down into one little storage container.

Wow. I barely use a few bags, if that.
But then, we do eat a ton of meat, quite a few of our suppers are a simple small steak on the grill, without sides.
Side dishes are overrated, IMO. :D

My guts do not like an abundance of veggie matter at all.
Those two days of nothing but veg matter did me in for days after.
I'm definitely a high protein type.
Hence, my focus on the malabsorption these days.
Eliminating the cheese for Whole30 is going to be interesting, but thankfully it lasts a long time, so no wasting of my stash.

As for FB, I used to worry about friending people and being opened to more unwanted requests. Eventually, I just stopped answering most of them. I feel no compunction in unfriending either. Just because it is out there doesn't mean I have to be. It isn't like you are likely to see dude if you haven't in 20 years anyway. I'm a crab tho.

I spend a lot of time on the internet.
The only reason I started a FB was to use it for when I was going to start trying to get dance gigs. Now that it's becoming more and more clear that such a thing is never going to happen, I'm not sure what to do with it.
