What the fuck did I just read?

Today's Tumblr collection is Tuesday, July 30: Maps.

As I pulled my lunch out of the fridge yesterday, I realized I had brought basically the exact same food for my breakfasts and lunches this week. I cooked and stockpiled two meals over the weekend and somehow didn't realize I was using largely the same ingredients in both. Amazingly, they taste different enough that I think I'll be okay.

Meal One
Pork and Green Bean Curry 1
1 lb ground pork
2 lb green beans, snapped into 1-1.5 inch lengths
2 c carrot puree
1 c broth
1 T coconut aminos
1 T Penzey's Bangkok Blend
1 c coconut milk

Shake up the green beans in a large bowl with melted coconut oil until well coated. Roast at 350F for an hour or more, until the beans are roasted to your liking. Stir at least every 30 minutes, shaking pan well each time.

Brown the pork. Add the beans. Turn heat to low and add remaining ingredients except coconut milk. Stir well to incorporate. Simmer for ten minutes or so to thicken. Remove from heat and stir in coconut milk.

Meal Two
Pork and Green Bean Curry 2

2 lb carrots, diced
1/2 c broth
1 T coconut aminos
1 T Penzey's Rogan Josh
1/4 c smooth almond butter
1 c coconut milk

Shake up the green beans in a large bowl with melted coconut oil until well coated. Roast at 350F for an hour or more, until the beans are roasted to your liking. Stir at least every 30 minutes, shaking pan well each time. When done, scoop into a container and set aside. Repeat roasting process for carrots.

Brown the pork. Add the beans and carrots. Turn heat to low and add remaining ingredients except coconut milk. Stir well to incorporate--stir extra well because sometimes that almond butter does not want to mix in. Remove from heat and stir in coconut milk.

Thanks to the texture differences between the two types of carrots, and the (IMO) varying flavors in the Bangkok Blend vs. Rogan Josh, the two dishes aren't terribly similar, taste-wise. I think I'm going to be ready for a break from green beans by the end of the week, though. Or maybe not. I dunno. Roasted green beans are fucking delicious.

I mentioned yesterday how my glutes were killing me after Sunday's session. Well, by 1pm my hamstrings, quads, and forearms had joined the party (WTF, forearms?). For most of the afternoon there wasn't a time that I was sitting that I wasn't using a lacrosse ball somewhere--under my butt, hamstrings, or pushing it into the top of my thigh. Just. So. Sore. Also, I needed/wanted a nap like whoa. Guess I did do a lot on Sunday. More than I thought.

Nobody will be surprised when I mention that I dislike Facebook. It's come in handy for a few things (finding a taker for those Josh Turner tickets), and it's the best way I can reliably communicate with Trainer Andrew. But overall, bleh. It's come to my attention that there's yet another thing I don't like about FB. It encourages people to think I want to be social. Mysteriously, someone I knew my freshman year of college found me on FB and friended me. Sure, okay. She lives in Connecticut, so no big deal. A few others from that circle found me and that was fine, too. But now one of them sent me a message that said "Hey, we should catch up sometime. When would you like to get together?" and I'm like "Um. Never?" I mean, this person is a fine person and all but I am full up on friends and the time I have available for friends. Especially In Person Friends. Hell, two of my bestest besties that are here in town I only see maybe every other month or so because of our schedules. I simply do not have the time or energy to devote to rekindling old friendships--and this person never even left Lawrence. If I wanted to stay in touch, I would have. Right? I mean...right? Does that seem weird to anyone else? If I wanted to catch up with someone, I'd have done so earlier or, you know, better yet, not fallen out of touch. The whole "hey let's get together someone" is so, so awkward.

God damn you, Facebook.

Ah, the introvert life. Yes, I get it. My daughters despair that my FB friends list is under 100 total, but I'm good with it. I'm also generally pleased to orbit most events/groups at a distance most of the time -- an affectionate distance, but still...

I use it for sharing pictures, consuming "positive content," and keeping a small channel open to people I like (even if I seldom get to see them). Getting tactical about it helped a lot to keep me from feeling overwhelmed.

OH, how many carrots does it take for 2 cups of puree?
Or, barring my possible malabsorption, any veggie, for that matter?
I was STUNNED at how two large! bags of chard on sale at Natty Gros cooked down into one little pot for the freezer.

I'm not positive how many it takes, but I buy ten pound bags at Costco, chop up what fits in the storage container, chop and roast a pan-full, and the rest (maybe four pounds?) goes in the pot for cooking and puree.

Different vegetables will, of course, cook down more.

As you've learned, greens cook down like whoa. The giant bag of baby kales from Costco cook down into one little storage container.

I still buy a lot locally, though. I mean, we eat a ton of vegetables in this house. That ten-pound bag of carrots barely lasts us a week and a half. The bag of baby kale maybe lasts four days, and one package of the spinach is gone in a week. Since it's not feasible to drive to KC every weekend for the same four vegetables, I only stock up once every six weeks or so. So, yeah, I'm still buying a good amount of produce at Natural Grocers and the Merc.

Wow. I barely use a few bags, if that.
But then, we do eat a ton of meat, quite a few of our suppers are a simple small steak on the grill, without sides.

Side dishes are overrated, IMO. :D

Yep. Vegetables, lots of them, are crucial for us to have happy guts. YMMV, but we feel best when we have at least two servings of vegetables with every serving of meat.

Edit: I mean, look at the ratios of meat to vegetables in those curries...

My mileage really does vary from yours.

My guts do not like an abundance of veggie matter at all.
Those two days of nothing but veg matter did me in for days after.
I'm definitely a high protein type.

Hence, my focus on the malabsorption these days.
Eliminating the cheese for Whole30 is going to be interesting, but thankfully it lasts a long time, so no wasting of my stash.

McK has no problem with cheese, and in fact, feels pretty rotten when he doesn't get his kefir or yogurt on a daily basis. Man, I fucking miss cottage cheese, I tell you what.

As for FB, I used to worry about friending people and being opened to more unwanted requests. Eventually, I just stopped answering most of them. I feel no compunction in unfriending either. Just because it is out there doesn't mean I have to be. It isn't like you are likely to see dude if you haven't in 20 years anyway. I'm a crab tho.

I spend a lot of time on the internet.

The only reason I started a FB was to use it for when I was going to start trying to get dance gigs. Now that it's becoming more and more clear that such a thing is never going to happen, I'm not sure what to do with it.

IBeyond keeping track of friends I use it as my one stop shop for keeping track of bands, entertainers, retailers and similar folk. Eliminates checking lots of websites or *shudders* signing up for more mailing lists.

I wrote about this a few months ago. After going through some friend-less years when I was a kid it feels weird to turn people away, but you have to take care of yourself. I skipped my 20 year reunion so I could hang out with my usual circle of friends and that was the perfect decision.
