Crispy Chicken with Carrot Noodles

I just made the most amazing breakfast. It's a simple dish, but unlike most of my recipes, requires more than one pan, and more than one thing cooking at a time. [livejournal.com profile] mckitterick is at his writing group, so this serves just one. It's easily adjustable to feed however many you want, though.

Crispy Chicken with Carrot Noodles
~1 c shredded chicken (I was pretty hungry. Adjust to your own appetite.)
2 carrots
2 t fresh dill, chopped
1 t minced roasted onion
Coconut oil
Coconut aminos

Make carrot noodles with a vegetable peeler (tip: rotate carrot as you peel it so you don't wind up with a bunch of really wide noodles). Heat an appropriate glob of coconut oil in a pan and toss in the carrots when the oil is hot. Stir occasionally while you make the crispy chicken.

In a separate pan, heat an appropriate glob of coconut oil (you need more than you think to get the chicken to crisp up) and throw in the shredded chicken. Let the chicken sizzle until it's golden and kind of stuck to itself. Break up, stir around. Continue until it reaches an acceptable crispy level (this is something you need to figure out for yourself--I like mine pretty crispy, but you have to be careful not to let it burn).

When the chicken is about halfway done, add a few splashes of coconut aminos to the noodles, along with the dill and onion. Keep stirring more frequently than you do the chicken, and don't cook so long that the carrots get mushy. You want your noodles to have some integrity.

Once both are done to your satisfaction, dish the noodles onto a plate and top with the crispy chicken. I added a bit of salt, but it wasn't absolutely necessary.

Sounds delicious! And I have all these things and will maybe make this for lunch today. ETA: well, i don't have minced roasted onions, but I'll probably be able to make due. I think I have some sort of galic/onion spice blend thing in the cupboard.

I love how you also enjoy meals that other people call supper for breakfast.

I haven't tried making chicken crispy before, I've got to do that with my whole chicken leftovers this week!

As you well know, when one is allergic to dairy, eggs, and wheat, most standard breakfast foods are Not An Option. =D I don't remember when I stopped thinking of breakfast requiring a certain...genre of foods. It must've just been in the past few years, because even when I was doing Primal instead of Paleo I was still heavy on the egg casseroles for breakfast.

OMG you are going to love crispy chicken. You'll never eat plain leftover chicken breast again.

I usually make chicken salad with mine.. this'll be a nice change to try.
I mostly eat breakfast foods at night... quichy casseroles, even fried eggs. As far as breakfast food, I often just eat a few rashers of bacon... maybe a yogurt as well at times.

Man, I dunno what's up but I'm sporting a massive squishy belly right now.. have been since this past week. I can't fathom it, but it's damned uncomfortable.

Oh man I'm glad someone else does this. Another too-many-carrots trick: Chop them, boil until soft, and puree with water as needed. Handy soup thickener!

Made crispy chicken with some leftovers to top a different dish, yum! Can't wait to try the whole dish.

I think I was idly considering some glazed carrots but then didn't feel like bothering. I bet I could freeze the carrot puree into cubes to use later, too. Or, you know, in case a random baby comes to the house and needs lunch.

A single ice-cube worth of carrot puree wouldn't do much, I don't think. I freeze stock in cubes so I can pull out what I need, so I'd do a batch at a time. Or reuse the Chinese take out soup containers my parents use to send me home with leftovers. So handy.
