Venison Pumpkin Chili

Venison Pumpkin Chili
1 lb ground venison
1 small onion
1 can pumpkin puree
1 can diced tomatoes
1 c chicken stock
1 red bell pepper, pureed with about 1/2 c of water*
2 t each chili powder, oregano, basil, smoky paprika

Brown the venison and onion together. Do not drain what little fat renders out. Add seasonings and stir fry for a minute or so. Add remaining ingredients and simmer for at least half an hour. Add water according to how thick you like your soup.

I let mine sit in the fridge overnight for lunch the next day and served it with slightly modified spaghetti squash croquettes (we had no spinach or carrots and only half a squash).

* Added a lot to the depth of flavor. Don't skip it if possible!

Cool. There's so many things we can do with the VitaMix without all the cleaning work now that I thought I'd ask. Yeh, those seeds are bitter.

That sounds really good! I needed this recipe a week ago when we were gifted with a pound of deer meat and i had no idea what to cook with it. We ended up eating it plain with a side of fried sweet potatoes and onions. Only one of the kids was impressed, lol.

I lucked into this batch. A friend of [livejournal.com profile] roya_spirit shot more than one deer and she agreed to share her portion with me.
