Black Angus Cinnamon Bites

I realized that Paleo-eating mindset had really sunk in when I saw this image on Dr. Boli and thought "Hm. Sounds tasty."



Maybe I'll try cinnamon instead of curry in the next batch of jerky.

Scott Sonnon says this on his blog today:

I've been thinking about moving lately. Not moving as in pack-up-stuff-and-hire-a-truck. Moving as in getting my ass off the couch and starting some serious sweat. I know I've been saying that forever, but I'm moving pretty slow these days--mentally, physically, emotionally. Everything's slow. I'm trying to think of it as baby steps and not beating myself up for being a fucking lazy-ass slacker.

Yeah, I'm not letting myself beat myself up. But starting to feel that "Come on, woman! Pull yourself together!" is a good sign that I'm going to be able to start moving in the right direction soon.

Maybe not tomorrow, but soooooooooon.

I used a lot of cinnamon in the deer and I wasn't so thrilled.. too sweet. But maybe that was with the sweet potatos making it more so.

Beef would probably be a better bet.

I need to get moving, too. This ennui is hideous and making me feel really crazy.
The other night I came up with a phrase for the way I feel lately.. vicious apathy, as in:

That's when I know to start staying away from the Internet, because it just builds into a froth of angry at all the stupid people and I flail helplessly in my head for a while.

I've used cinnamon in a few Ethiopian-style beef curries, so I might try playing with one of those flavor blends. Looking forward to it! Of course I'll post my results. =)

When I've used cinnamon on drying things before, usually apples and the like, I've found that the aromatics can do funny things and leave you with just the sharpness and not enough of the depth. Maybe it might be better to use the cinnamon in conjuction with other spices, more of a 'five spice' balance to keep things evened out?

Oh, yes. I'm thinking a cinnamon-ancho chili-cocoa mix for a sort of molé-esque thing. Hm. I wonder how many people have successfully attempted chicken jerky.

Cinnamon-ancho-cocoa jerky...

Don't mind me, I'll just be over here in my culinary happy place, sighing.

I use a cinnamon-chipotle-cocoa mix to dust meringue cookies, and call 'em "Sass cookies." They're generally a huge hit. I tend to be a fan of the liberal use of molé-style spicing. Living in Austin means I have a liberal scattering of good molé options.

I have seen chicken jerky so I know it can be done, but I really want to try salmon jerky. I've seen a lot of amazing recipes for dried salmon, both sweet and spicy.

i think that having spent the past year plus some exercising poppet i have given myself a decent start. what to do next is the big question. quite keen on getting the prehensile feet with the foot gloves. my friend lucy lives round the corner from the shop i am planning to go to and fancies coming with. she is out of town for a few days, but when she comes back i will go from hers. it will be good to make a mini trip from her house, less tiring, and maybe also fun. i already have quite mobile feet, it will be good to capitalise on that, i think.

If you haven't considered it, racquetball can be a really fun way to run around a lot. I just started getting back into it last month (I played once or twice a week my first 3-4 years at KU), and it's been a great supplement to new eating habits.

(Thanks again, by the way! This has been one of the best learning experiences of my life. From January 3, I'm down around 20 pounds.)
