Adventures in eating

Discovery! Since I can't have mayonnaise anymore (no eggs, no mustard), I sauteed some carrots and canned tuna in coconut oil until they were slightly browned, added parsley, chives, and some coconut aminos. Surprisingly not awful and much better than the tuna with pear.

Now I'm off to Warrensburg, MO get part of a cow. God, it's gross outside.

I made those amazing salmon patties the other evening, and they were so good that I want to EAT THEM EVERY DAY. I saw a website where someone made them without the pork skins and someone else made them without eggs. Might be worth some experimenting? Heck, dollar store sells tinned salmon, right?

I'll have to try this grilled tuna,too. I'm still not over the Yacht Club taking their tuna steak off the menu, it was AWESOME.

I am uncertain about making salmon patties without egg. What holds them together? I don't know that the pork rinds alone could do it. Perhaps I could make some sort of salmon-pattie-scramble, though...

Hmm. I can't find any recipes that don't use either mayo or egg, other than flax seed gel.. and that's out as well.

I did find someone who said they make a puree of part of the salmon with mashed sweet potato as binder.

What about cooking it in muffin tin cups? I made a ton of mini meatloaves like that!

Sweet potatoes aren't an option, either.

I don't need them patty-shaped. A scramble is just fine.

I had quite the search the other day looking for canned tuna that did not contain soy. There was only one kind, packed in olive oil, that did not have any. Even every single can packed in water said it contained soy.

So I guess next time I need to look for the way more expensive olive-oil packed imported Italian tuna, which I've heard tastes better, but is also quite a bit more expensive.

What tuna do you get?

I get the solid white albacore tuna at Costco. No soy. It's about $13 for eight cans. Want me to pick some up for you next time I go?
