I came to work today, not because I'm feeling better (I'm not), but I've got a meeting today and shit to get done here. FUCK. I can't sit up straight but god damn it I'm here. A million thanks to [livejournal.com profile] mckitterick who drove me up to campus in a car before the gates closed. Walking would have been miserable and a scooter only marginally less worse. Even the car was pretty horrible, but it was better than the alternatives.

Happy news, I called Steve's Meats to order the cuts for my side of beef. and they take credit cards! So [livejournal.com profile] mckitterick can cover the processing fee which means I'm not so bad off financially as I feared. Ordering was a new and exciting adventure--I hope I'm happy with what I get since I felt completely inept at it. I was much more comfortable ordering the cuts for the hog, mostly because for that it was just "ribs, pork chops, bacon, and the rest as ground pork, please."

The next week is going to be All Bone Broth All The time since I gotta get last year's cow bones out of the freezer to make room for the new ones. My poor crock pot. I ask a lot of it.

My consultation with the hypnotherapist went well. I like her. She has a very pleasant speaking voice, which I'm sure they cultivate in their training, and a goofy laugh, which might not be cultivated but helped me like her more. She moved to Lawrence in May and so is building her practice--same situation as with Kiva when I started seeing her for acupuncture, so that was kind of cool. She's certainly not cheap ($120 per 90 minute session) but this isn't something I'll do indefinitely and she does offer packages where if I buy four, six, or ten sessions at a time I get increasing discounts.

I am wearing one of the faboo and cozy cashmere sweaters I found while thrifting in Indianapolis which makes me feel marginally better because who isn't just a tad comforted when wrapped up in cashmere purchased for two bucks? Aw yiss.

Sounds like despite the wonders of the moon-cycle, you're still having a good day! And I am envious of your thrift finds! I can't find things here like I did when we lived down in Texas! Of course, I haven't been over to Wichita to go look a the stores there, either....

Re: bone broth-Are you going to roast your bones before cooking your stock? I'm just curious, as I've never made any sort of stock from scratch; the closest is when I make chicken soup, and I still generally use some sort of broth or soup base as a starter....

Yeah, big cities are way better for thrift finds. I rarely find anything outstanding here in Lawrence (although that doesn't keep me from near-weekly checks). But I've made some serious scores in KC and Indianapolis.

Oh yes, I always roast the bones first! And then I drain off the rendered fat for use in cooking. Waste not, you know.

Here's my "technique" (snort) for broth: If pork or beef, roast bones at 375F for twenty minutes each side. Cover bottom of crock with bones. Pour in 1/4c vinegar. Fill with water. Cook on low for at least 24 hours, checking water level at least once. Pour and strain into freezer-safe containers.

Does the vinegar help break down the bones/marrow, so makes for more/better flavor? (Not that a quarter cup of vinegar in a big crock is even going to be tasted; it will just add a footnote in the flavor.)

If I'm wanting a lazy supper, I buy one of those pre-roasted chickens from Dillons, make one meal out of it, then toss it into the pot with water & broth and boil it for a half hour or so, then let it cool and de-bone for base for chicken soup and chicken & noodles. It starts out being way too salty, but by the time I add veggies or frozen egg noodles, it turns out about right.

The vinegar helps the bones break down which increases the calcium content. I don't know that it does much of anything to the flavor.

Those rotisserie chickens are fantastic for broth-making, and since they're already cooked, there's no need for that roasting step!

I wish they were better quality birds; a chicken should not have a layer of fat, or at least not as much as those birds have!

Good to know! I've only ever made chicken stock from rotisserie chicken carcasses but if I ever make any other kind of stock, I'll try roasting the bones first!

re: bones and vinegar, if you soak a chicken bone in vinegar for a week, it becomes really pliable, sometimes enough to tie it in a loose knot. You know, if you are interested.

So worn-down at the end of this week. Fortunate not to have horrendous cramps this month, but EGAD the blood volume seems pretty amazing. Plus a brand-new sore throat developing this afternoon.
