Co-worker A came over for dinner Friday night and we made this. I haven't had tofu in ages. I avoid large amounts of soy bc thyroid issues but oh wow yum. I'd forgotten how much I liked it. And I really like Coworker A, y'all! Such a fun person, and very neat that we've already become friends. They've been on vacation since July 1 but return on Monday. It'll be nice to have them back in the office.
